While I understand that in Singapore there isn't much in terms of local sources for good produce, I did hope the meal was more sustainable and incorporate more local/readily available ingredients and also those from nearer/neighbouring countries. If there was a stronger market for good local/regional produce, I believe it can help the region improve on its agriculture practices. I have nothing against using the best from all over the world, but it definitely would be nice if they could mix it up a little and challenge themselves to use produce from nearer shores to create similar or even new and more exciting dishes.
I agree with you. And I guess that's the reason why there are more and more some private chefs in Taiwan. Some of them do use local resources to create unique dishes.
may be singaporeans are too much influenced by their english medium education and medium, the restaurant being named "zen" is a form of orientalism which imitates superficially parts of asian culture that the westen eyes fancy. although the majority of singaporeans are chinese, they seem to have lost their eastern culture. zen is a japanese name for 禅 and the proper chinese pinyin is "chan". the philosophy/religion of chan is more about simplity, self cultivation, non-materialistic enlightenment rather than bourgeois cuisine. naming a meat-eating restaurant as zen is an insult to zen/chan, in a way like how westerners would disrespectful display the stolen heads of buddha statues in their homes as decoration.
