Wow, the control of the temperature must be insane. At some point, the rods for the eyes were hard enough to cut, then he was able to pull and thin it out again to such a small shape. Also I wonder how he keeps it square? So many candymakers do the round kind to roll bc it’s easier to keep the shape when it’s still in oobleck form
You answered it yourself, temperature control. I assume the entire table he is working on has 'set' temperatures that very. he moves the block from one area to another based on the present temperature, and those lamps seem to be heat lamps placed specifically to create varying temperatures. Hence the gloves. Pretty certain that shit is not fun to touch bare handed (outside of the hygienic reasons). You also can't compare to other candy stores because alot of them have crazy different quantities they produce. Some Candy Stores for example only distribute out of their own storefront, at a premium price. That way they maintain a small but loyal customer base. Others supply entire districts and local 7/11 type stores with candy, so they produce a metric-fuckton more, and therefore have a different production/rationing process. One way or another, what you're seeing here is 'very' oldschool candy making. We've had the same/similar candy in europe aswell, since it used to be a whole ass profession of it's own until the inevitable happened and it all got commercialized to straight garbage by Snickers and Co.
This is really hard work man. Making that candy is rough on the shoulders and you gotta be fast at it too before it cools down and becomes too hard, speaking of which the candy is ridiculously hot to the touch making it uncomfortable to work with. I don't even wanna think about washing the dishes after making candy, though I did it for school I imagine that a store specializing in making candy has a different way of washing their dishes and supplies or has a machine maybe that does it for them efficiently.

@@annaa437 my country definitely doesn't have anywhere to go learn because it doesn't have a lot of modern education to begin with. I wanted to be a service dog trainer and did 2 years in college in an animal care course just to find out my country doesn't have anywhere to go learn service dog training 💀 so now I'm here 😂
