but if the mobs scale to your health, then what's stopping anyone to farm exp right at the beginning and then move on when they thought it was enough

There's a setting for death penalties and I believe their server is set so there's no xp debt upon dying, which does mean this would, hilariously, technically work. The increase to max hp and stamina you're thinking of is +1 per character level(plus a temporary stamina bonus if you ate high quality food). Although their food and water levels will get reset to, i think, 50 so they shouldn't eat a big meal before starting their their hunger games reenactment.

I think it only applies if you are Level 6 or higher.

It looks like their server has death penalties set to no xp debt. If that was set to default then you'd be right, killing each other would cost more xp than they gain.
