2 nectarines or peaches.
water (80 ml / 1/3 cup),
sugar (80 g / 2.8 oz.),
Agar-agar (4 g / 1 tsp) or pectin.
Mold size 16x16 cm / 6.3x6.3 inches,
Biscuit cookies (100-150g / 3.5 - 5.3 oz).
Soak gelatine (10 g / 0.35 oz) in water (60 ml / 1/4 cup) and let it swell.
Ricotta (250g/8.3oz) or cream cheese.
Sugar (70g / 2.4oz).
Cream 33-36% (180 ml / 3/4 cup).
