Wood is NOT optional. The entire point of “smoking” Meat is to coat the meat in a thick dark crust created by the smoke which is made by burning wood. Chips or pellets whichever. Pellets will smoke longer I recommend using pellets but youMUST use wood!!!! Or you are not smoking meat.
