Was looking for the manual for this item . I want the recipes she has in her book. Do know where I can find it ?

Hi Donna! No, not at all. I actually like the homemade ice cream better than her mixes. Here is a video where I am making homemade ice cream with this machine. The recipe was from her recipe book that was included with the machine. Super yum. I love chocolate mint icecream too. I would definitly shave some more chocolate into that mix though.

Do you have to use rock salt or can you just use ice?

You need the salt to keep the ice from melting so fast so that the ice cream can churn properly and have some firmness to it. If you just use ice, the ice will melt fast and the ice cream will be more like a liquid shape with no firm form. So yes, you need ice, the ice is very important in this process for this particular machine.
