Oriental Salad is the most appreciated potato salad with egg and onion, pickled bell peppers, black olives, parsley and green dill, and so on. It is an improved salad, a combination between the winter Oriental salad and the spring to summer potato salad.
The recipe can also be made without eggs for fasting, and yes, I also have this version of eggless Oriental salad.

Ingredients for Oriental salad:
- 1-1.5 kg of potatoes;
- 2-3 medium onions;
- 5-6 hard-boiled eggs;
- 150-200 g black olives;
- 5-6 slices of pickled bell peppers;
- 50-60 ml sunflower oil;
- 50-60 ml apple cider vinegar, or to taste;
- 5-6 sprigs of green onion;
- salt to taste;
- 1 teaspoon of sugar (for marinating the onion);
Optional: 1/2 bunch of parsley and 1/2 bunch of dill.
Let the potato soak in the flavors for 2-3 hours, then serve.
