Last week, I took some time to experiment on the Apam Balik recipe. I was so intrigued to use my Pressure Cooker for the experiment.
And I have found out that the Pressure cooker makes THE BEST Apam Balik at home. If you don't have a pressure cooker, then you can use a gas stove, which works fine too.
Previously, before I bought Pressure Cooker, I make my Apam Balik on the gas stove using a non-stick pan. And it works just fine.
My experiment also confirms that the induction stove doesn't work on Apam Balik. Don't waste your time on that.
So, I hope this experiment helps and enjoy the Apam Balik recipe.

Apam Balik Recipe At Home with Pressure Cooker - Malaysian Peanut Pancakes - Easy Pancake Recipe!
Makes about 5-6 Apam Balik
Ingredients :
2 cups of self-raising flour
1/2 cups of sugar
1 1/2 cups of water
1 egg
1 tsp Vanilla Extract (optional)
Method:
1. Mixed all the above with hand/blender/food processor until becoming a smooth batter.
2. Rest the mixture for at least 30 minutes.
3. Heat the pressure cooker. Mode high heat saute.
4. Pour less than 1 cup of batter.
5. Swirl the batter. And wait until the batter cook.
6. Once cooked, you can start to put in all the filling like sugar, ground peanut, butter, and creamy sweet corn.
7. Flip the Apam Balik once the outer skin turns to a golden brown.
8. Cut into smaller pieces and enjoy!
Tip:
1. I have tried an induction stove and a gas stove at home. For the induction stove, it doesn't work. The outer skin will not brown evenly. For the gas stove, it will work, but the outer surface will not as beautiful as using the pressure cooker.
