It's because of all the against the grain passes. You imagine yourself feeling the blade scrape away all of your unwanted stubble with those against the grain passes. You then imagine running the tips of your fingernails against the grain of your freshly shaved areas until you fall asleep.
She is a damn good barber with good technique and plenty of practice. For you guys complaining about her going against the grain, where in the hell are you getting your shaves?

Does a patchy beard result from shaving too early in life when all of the hair hasn't fully grown in yet? Whenever Massimo grows a beard, I always notice the patches with no hair.

There are definetely very good traditional barber shops all over the country, especially in Athens and Piraeus there are a couple that are really good and can compete with the "big guys" abroad.
