All About Measuring Cups
Ever wonder why the recipes you get from the interwebs don’t work? Well there could be a lot of reasons… but one is probably how the ingredients are measured.
Did you know that there is no standard ‘measuring cup’ used around the world? Did you know that even within countries you will find multiple sizes of measuring cups for sale?
This variation can wreak havoc on your baking… so lets try and clear this up.
In the U.S. a measuring cup is 236.588 mL in volume… except when it’s 240 mL in volume. Very slight small difference to be sure, but you will see both measuring cups in your cupboard. The difference of 1 teaspoon doesn’t really matter much, but if you are making a large volume, it can add up.
In most Commonwealth countries a cup is 250 mL in volume - but even this is problematic, because Canada and Australia have chosen different spots for 1/3, 2/3, and 3/4 cup measurements (see chart below).
If you are in Canada (like we are) current cookbooks all use 250 mL as a ‘cup’, but if you walk into a kitchen store you will find Canadian measuring cups, Both American cups, and Australian cups for sale. Unless you take the time to look closely at what you are buying… you could end up with multiple sizes in your cupboard.
On shopping trips to the U.S. we’ve also noticed multiple cup sizes for sale, and have to assume that it would be the same elsewhere as well.
Of course even though measuring cups are marked with a measurement - it doesn’t mean that they are accurate. Many of the cups in our kitchen are out by as much as 20% when tested; so pretty useless.
Just to add to the confusion Canada has a pre-Metric cup… so any recipe written prior to the mid 1970’s a cup is even smaller in volume - 227 mL - so that’s why you may be having trouble with your Gran’s recipes. You may also still have these smaller cups in your cupboard.
Another point of confusion is that Australian recipes use a different size Tablespoon - 20 mL - while Canada and the U.S. uses 15 mL.
Of course when using volume to measure ‘dry’ ingredients there will always be variations between people - so weighing is always the best way to go.

I live in Belgium and have been trying out overseas recipes for years without having any measuring cups. Constantly converting, which is annoying. So I came across this video because I was looking to buy measuring cups and wanted to see which kind would be best. This video just convinced me to not spend any money on measuring cups and stick to converting. Luckily more and more recipes list the metric measurements as well.

I was watching a RU-vidr and i was weirded out at how small her "1 cup" is... So that is why im here. Now it makes sense. 🤦‍♀️🤷‍♀️

I'm a fellow Canadian who's just received a very good quality 17 piece stainless steel box set of cups & spoons off Amazon (seller Bermunavy). The 1 cup=240ml, down to the smallest 1/8 cup=30ml. (So it's "American" I'm guessing from what I gather from your explaining/ranting?) The accompanying spoon set has 1 Tbsp=15ml, down to 1/8 tsp=0.63ml. It also came with a nice fridge magnet placard with tables of measuring equivalents for reference. It also came with a levelling wiper, and a slotted "bowl" with slots & a hole at the bottom which I'm not sure what it's used for (egg white/yolk separator I'm guessing?), which is why I searched and found your informative video here...thanx...👍

Yes, the vast majority of recipes give everything in cups, tablespoons and teaspoons and I find that super annoying because, as you said, it means different amounts in different countries. In my own drawer, I have two sets of cup measurements that are different. And there are other things like different compositions of self-raising flour (or self-rising flour to others).

I love using a scale since I don’t have to wash measuring cups or worry about under/overpacking flour or sugar. I just skip any recipe that uses cups now; I appreciate that you guys include grams! The difference in mls between cup sizes is new to me so I will go by mls now for liquids. Thanks!

Yeah! Today Sept 2022 ,I decided to research this measuring cup mess and yes it's still a mess. So I'm keeping the set that has the metrics scale marks (a nice metal set) and getting out the others that I have mostly plastic, one is wood, another ceramic just for consistency sake! Also a big dilemma for measuring coffee, I'm keeping my lovely metal handle/ silicone scoop because I'm used to it and already fine tuned to my strengths taste to my 3 favorite brands (ILLY, Lavazza and Yaucono). I'm getting a measuring set for my new hobby (Teas ) for consistency sake again (I like the taste of loose 🍃leafs more than prepackaged ones). Measuring is very important until you develop a routine. 😁😉😏

In Korea, 1cup is 200ml. When I read an American recipe for the first time, it was really confusing.

Great topic! Though I too have many different measuring cups and spoons, I prefer to weigh my ingredients, especially for baking. It's so much easier, more accurate and less messy. I HATE measuring peanut butter, butter, etc., with cups and spoons. It's unnecessarily messy, and not at all accurate. Sorry, guess that was my little rant for the day lol!

Yeah we've pretty much moved to weighing everything - and that is reflected in our newer baking recipes - but it's amazing how much pushback we get for even mentioning Metric or using a scale.

I've had a few recipes that haven't quite worked out and maybe it's down to slight differences in measuring that are throwing everything off. I'd read somewhere about differences in cups but I had no idea about tablespoons for a long time. In the UK, US and I believe Canada as well they are 15ml which is equal to three teaspoons, but here in Australia they are 20ml which is four teaspoons. If the recipe calls for multiple tablespoons of something, that can be quite a difference in amount if you're using the wrong size.

If your cups don't specify the volume in ml, it's really easy to find out. 1ml water = 1g. So a 250ml cup should be 250g when full. This is obviously good for measuring 1/4, 1/3, and 1/2 cups.

@@auburn.JoaoDuarte The same reason one cup of solid lead weighs more than one cup of water. Density. Although milk and water are both liquids, milk has a very slightly higher density than water because it contains other things like fat (1g water = 1ml, but 1g milk = 1.03ml). Flour is a powder and has tiny air gaps between every powder grain (so a packed cup of flour weighs more than unpacked because some air gaps have been pressed out). 🙂

It's hard to tell when cups meant for dry measurements are "full" of water. Easy to overfill due to the surface tension of the water.

I've seen recipes on RU-vid from Italy and Sardinia that have 1/5, 2/5, 3/5 & 4/5 requirements. The conversion gets more difficult considering the non standardization you are speaking about. I don't have a scale, so I guess I'll be looking for conversion to ounces, which is on the other side of my glass measuring cups. Of course, I was taught that glass measuring cups are for liquids and the plastic or metal ones are for dry ingredients. Complex!

Great video. Looking for some new cups, here in the US I see a lot of 250 ml cups now. I'm gonna weigh when I can! Another question I have, just how accurate are these cups anyway? Especially the cheap ones from Temu or the Dollar Store? Edit: I "calibrated" a bunch of them the best I could with sugar (I used 200 g/cup of sugar). Some are spot on, some are as much as 10% off, name brand and generic both.

I’m in UK and bought my first set of measuring cups. 250 ml and have just found out that not all cups are the same. I have balance scales that measure in lbs and oz. and now these cups. Have no metric scales. I end up googling a lot! Still debating whether to buy a set of metric weights.

Get a digital scale - these typically cost around 10 pounds and weigh up to (and slightly over) 5 kg, accurate to the gram. You sometimes see Glen using one.

And this right here is why it's so difficult for me in America to share a recipe with a friend in Germany. That and availability of ingredients, like beans.

My measuring cups are based on a 240mL cup. It took a long time to find this set because I hate poor quality measuring cups. These are stainless, thick gauge, single piece cups. No spot welded handles that break off and leave me having to buy a whole new set to replace the broken one. My measuring spoons are the same - except no Metric markings. Does anyone know where I can get some measuring spoons of high quality that are metric marked based on a 240mL cup?

Metric certainly helps in a global sense - if we all use the same measurements a lot of things would be easier. But even though Canada is officially Metric...

We were going to go metric. Specifically, in the mid 70s both Canada and the US (and maybe other countries) were going to switch to metric measurements to make things easier for global markets. Obviously, America didn't get any further than the 2 liter of soda and ml or grams on products you buy in a store. Not sure why the change didn't actually happen. I just know it's a pain to do conversions simply because my brain isn't trained to think in metric.

I don’t get the people who complain and say they don’t know the metric system. What’s to know. You see the number you want and fill to it. It’s ulike the imperial system where you have the insanity of an ounce being both a volume and a weight. And then you have to remember 8 oz in a cup and 16 ounces in a pound, if you are American, and yet a cup is not a pound. Metric is easy. Weighing things is the easiest. I wish recipes provided weights for shortening, brown sugar, molasses, honey, corn syrup. Fewer things to clean.

Do and say what you want about Imperial measurements and cups and so on. However there is no way that I am going to take a set of scales camping in the wilderness. My advice would be find any recipe you like and write your own recipe book that has all the same units of measurement, whatever they may be. It will save you time and faff in the long run

That's no excuse for not learning the metric system which is 'miles' handier than the clumsy imperial measurements (funny about the word 'imperial' - it implies monarchy and Britain - yet the American 'imperial' is different to the British one - that's how ridiculous it is). You can't go wrong with metric and it's so much easier working in 10s, 100s and 1000s. How many meals do you prepare 'camping in the wilderness' compared to preparing food year round?
