Sautéed chickpeas with spinach and bacon.
🛒 Ingredients (3 servings):
🔸 400 g cooked chickpeas (2 cups)
🔹 125 g bacon strips (4,4 oz)
🔸 200 g spinach (6 ½ cups)
🔹 1 onion
🔸 60 g almonds, natural (⅓ cup + 2 tbsp)
🔹 6 dates
🔸 Salt
🔹 Pepper
🔸 A pinch of cumin (¼ tsp)
🔹 A pinch of nutmeg (¼ tsp)
🍳 Sautéed chickpeas with bacon and spinach recipe, step by step:
1️⃣ In a small skillet, toast the almonds over low heat. Set aside.
2️⃣ Chop the onion and chop the dates into small pieces.
3️⃣ In a large skillet, cook the bacon over low heat until it has rendered its fat and is crispy. Reserve the bacon.
4️⃣ Add a little olive oil to the bacon fat and cook the onion with a little salt over medium heat until very tender.
5️⃣ Add the chickpeas and season with a little salt, pepper and cumin. Sauté for a couple of minutes over medium heat.
6️⃣ Add the spinach in two batches and cook, stirring constantly, until the spinach is reduced in size. When you add the second batch, add a pinch of salt and nutmeg.
7️⃣ Incorporate the bacon and the chopped dates. Turn off the heat and integrate the toasted almonds. ready!
👌 Notes: Instead of dates you can use raisins, and instead of almonds, pine nuts, cashews....
