it is no shock to anyone that grocery prices have been going up since the beginning of the pandemic food producers have struggled with shortages bottlenecks and transportation weather and labor woes all of which have caused food prices to rise the end is not in sight inflation has been climbing at its highest rate since 2010 and those prices are passed on to consumers meat poultry fish and eggs are up six percent over the last year and up almost 16 percent from prices in 2019 before the pandemic in this chart by the washington post you can see that meat poultry fish and eggs have gone up most significantly about 15.7 percent while dairy cereal bakery fruits and veggies have all gone up about five percent according to the us department of agriculture's cost of food reports feeding a family of four on a thrifty budget plan has increased from 154.90 in december 2020 to 30 197.30 in november 2021 which is an increase of over 27 percent in just one year in times like this it is super easy to feel powerless but i'm going to show you today how we can get creative and thrifty with our food budget to feed a family of four five meals for under thirty dollars

I’m trying to spread out my food stamps over the month (instead of buying more in one trip), cause like this week Kroger had 18 count eggs for 97 cent so I got two, meaning I got 3 dozen eggs for just under $2.

Hi Jen. I make hummus all the time with out tahini. I use about a tbsp of sesame oil in addition to olive oil and a bit of garlic. It's delicious and cheaper than buying tahini. ♥️

Jen, hi from Australia. The thing I loved about this video was the variety and the portions were definitely generous enough to feed hungry mouths. In our household (hubby & I), i eat between vegan & vegetarian & he's definitely a meat eater 75% of the time, so these suit us both. Thank you for the huge effort you put into this. Hope your family was satisfied with the great meals you had (would love to especially hear the kiddos opinions because sometimes they are the hardest to keep happy LOL)

Thanks for this “series” you are doing this week. It’s so helpful and timely! I’ve gotten several nuggets of information that has opened my mind on how to stretch our budget in better ways. One thing I wasn’t able to find though was your recipe for focaccia bread? You said you have used this recipe several times and it’s alway worked great. Did I over look it? We're empty nester here. We eat a lot of beans and lentils with rice. I cook a pot of lentil dahl that will last a few days. I also like lebanese mujadeera and black bean soup. Cheap as chips, usually under $1 a meal and no need to cook everyday. We also eat fruit, microwaved frozen vegetables, toast and porridge the rest of the day. In summer, instead of frozen vegetables we buy the big tub of salad leaves and tomatoes from Costco which last a whole week.

hi jen! im gonna be honest, i did not pay attention to like 60% of this video so i'm going to have to rewatch it😭 but i found myself instead just relaxing to your voice for 40 minutes. as someone with an auditory processing disorder it's really hard for me to listen to videos without turning on captions or visually seeing everything happening in real time, so i tend to avoid audiobooks and such. you speak so clearly that although i was not actively processing the words, i still found it extremely easy to listen to you. thank you so much! i think i will spend some time just listening to your videos now💗

Jen, these vegetarian recipes look scrumptious. Great video and meal ideas for all of us and I am not a vegetarian. Where did you get your big blue fork? I notice you use it often and I would love to get one or two. All your bread recipes look delicious also and I am anxious to make them and the enchiladas and the chili and the crustless quiche. So many good recipes to try. Thank you for sharing these recipes with us and for taking the time to make them all and making the vid. All that was a lot of work. You continue to amaze me with all you do in addition to working full-time and taking care of your family. My sister and her family lived in Urbandale, Iowa for 20 years and just moved back to the east coast where our entire family lives and we are ecstatic to have them "home" again. Loved this. Interesting and tasty budget recipes are often hard to make vegetarian and even harder to make GF - I could see myself easily swapping the flour for a bag of rice and I’d be good to go.

Great vlog Jen. I never use tahini in my hummus cos it's just so expensive, and I honestly can't tell the difference. I make my own a lot, and on the odd occasion I will put peanut butter in it, but not often.

Love this series, groceries are so much cheaper in the states than anywhere else. I also cried when I saw prices when I moved from Asia to Europe because prices were so much cheaper, but they are still more expensive than the states.

This was great Jen and you really wouldn’t think it was budget friendly. It’s different when you can actually see someone do this from start to finish so thank you so much for doing this. It has given me a lot of ideas and I am going to try some of these out they look so good 😊. I have to admit something it’s really funny I think. So when you were making the chili I was so zoned in on your every move that you stopped stirring it for a moment so I thought I would help and I went to pick something up to stir it for you lmao 🤣. I honestly have never considered cooking vegetarian meals because my husband is a meat and potatoes kind of guy. But I think I could incorporate one of these meals a week. I’m going to give it a try. Thank you for expanding my small horizon.

Towards the end of this video and you turned on the stove, I had stood up and turned around to fix myself a cup of coffee and heard it clicking and igniting and I panicked thinking the 3 year old had turned mine on, which my step stool that I sit on in the evenings was sitting right beside 🤣🤣🤣

Meant to tell u, we r getting an Aldi on the MS gulf coast! They have clear cut the lot and started burning the trees and brush, but I’m sure it will take good bit of time since they have to build a distribution center for this part of the country - I think that’s going to be in Georgia. Any way, I’m so excited! It will be about 20-30 minutes from me depending upon traffic.

I am really enjoying my Misen nonstick skillet that hubby bought for my birthday (but it showed up after Hanukkah). I am really loving the chefs knife too. I am going to buy myself a paring knife and another pan of some type (not sure which one yet,) I am being really careful with washing and storing the skillet so that it doesn’t scratch. I love making enchiladas too. My son doesn’t like anything Mexican but I take the filling and put it over rice and he eats it. Put it in a tortilla and its a no-go. Hmmm…anyway they look delicious. My hubby loves black beans and Mexican. Might have to make those enchiladas. I have some leftover black beans from the last time I cooked some. The Instant Pot is the ultimate way to make dried beans because you don’t have to soak them overnight and they cook up so quickly. No waiting hours anymore. I had never had chilaquiles until 1999 when I went to Bobby Flay’s Mesa Grill (the original on Broadway and 14th Street) to meet a cyber-pal from England for my birthday. I had never even known what they were until then and they were outstanding. I didn’t realize it was an economical dish made to use up old tortillas! I’ve made them a few times since. So easy and delicious. Authentically focaccia is baked in a rectangular shaped pan (a sheet pan with sides) but anything really works. Just judge baking time by size of pan. I’ve made it many times. Love those dimples in the bread. They hold olive oil so well. So good. Normally. I put it with spaghetti or pasta of some type. I usually serve cornbread with chili, or corn muffins. Try veggie chili made with Impossible or Beyond Burger “meat”. It is so good. I’ve also made it with eggplant and it was really good, surprisingly.

I found a hummus recipe online recently that didn't use tahini and I'm pretty sure it's the same recipe you use in this video. I had such a hard time getting my hummus smooth in the food processor. I processed it for what seemed like forever and still ended up with it being slightly chunky. Flavor was good though.
