Semi Formed Cheese
2 cups cashews, soaked for 4 to 6 hours then drained
1/2 teaspoon salt, optional
1/2 cup water
1 acidophilus capsule
1 teaspoon garlic powder
1/2 teaspoon mild red chili powder
1 tablespoon nutritional yeast
Fresh oregano leaves, as desired
Crushed red pepper flakes, to taste
Soak cashews. Rinse and drain. Add to a high speed blender with salt and water. Add in 1 acidophilus capsule and gently pulse in being careful not to over blend and heat too much.
Pour the mixture into a nut milk bag inside of a small bowl and either dehydrate at 105 F for 15 to 24 hours (depending on how fermented of a taste you'd like) or place in a warm counter pace area for 24 hours. You could also preheat the oven to its lowest temp then turn off and leave the oven light on leaving your cheese to ferment inside for 24 hours.
Place in your desired container. Mix in the garlic powder, chili powder, and nutritional yeast. Sprinkle red pepper flakes and oregano leaves. Store in a covered container in the fridge for up to 1 week.
NOTE: You can use pine nuts in place of cashews if desired.
Easy Avocado Dressing
1 medium avocado, pitted
1/4 cup fresh lime juice
1 large garlic clove
1/4 cup fresh cilantro
1/4 cup water, or more to thin
1/2 Serrano pepper, optional
1/8 teaspoon maple syrup
Salt and black pepper to taste
Add all ingredient to a high speed blender and blend until smooth.
