Brilliant. Just picked two spider crabs. Made the whole process easy. I liked the systematic approach.

Don't know if anyone has already mentioned it, but the shells should not necessarily be thrown away; it can be boiled and used for fish stock. Here in the States we use it for gumbos, chowders and the like. Obviously, the boil will need to be strained, but it's quite wonderful for other dishes.

Have you ever saw them being cleaned out by air pressure? Do it in an old fishtank on its side and use a compressor and air jet and blow the meat out and scrape the meat out with a kitchen spatula, the set up looks like a sand blasting chamber, your looking at your hands from the top of the tank, it was used as a quick way to dress crab for commercial sale up here in north east scotland, the legs and body was put back in the shell along with the brown meat and claws were sold separately

I was really surprised to see how much of that large crab was shell, it made me wonder how many crabs do they take to fill a 125 gram of crab meat; your bowl looked big so would you know how many gram of meat was in that. i know i am full of questions but that's just the way i am i could almost taste it here in the UK.
@Trojwaterman
@Trojwaterman 5 лет назад
Its a lot more than it looks at a guess probably 500g to 750g from that crab (2.4kg crab) It can vary a lot how much you get because when the crab has not much meat it will have water instead so when you weigh the crab its the same weight.
