Get ready to delight your taste buds with these scrumptious mini cannelés featuring caramelized onions and thyme! Perfect for an appetizer, cocktail party, or just a delicious treat, these little bites blend the richness of caramelized onions with a subtly thyme-infused batter. In this video, I'll show you how to make a double batch for even more indulgence!
Ingredients:
- 2 chopped onions
- 80 g of butter
- 50 cl of milk
- 100 g of flour
- 2 eggs
- 1 tsp of thyme
- Salt and pepper to taste
Instructions:
1. Melt 20 g of butter in a skillet and add the chopped onion. Cook over low heat until the onion becomes translucent and lightly golden.
2. In a small saucepan, heat 50 cl of milk with the remaining 60 g of butter until well combined.
3. In a bowl, mix 100 g of flour with 2 eggs. Whisk until you get a smooth, omelet-like batter.
4. Add the warm milk and butter mixture to the batter and blend until smooth.
5. Stir in the cooked onions and thyme. Season with salt and pepper to taste.
6. Pour the batter into silicone mini cannelé molds and let it rest in the refrigerator for 3 hours to firm up.
7. Preheat your oven to 260°C (500°F). Bake the mini cannelés at this temperature for 10 minutes. Then, reduce the temperature to 180°C (356°F, thermostat 6) and continue baking for 30 minutes, or until they are beautifully golden.
8. Let them cool before unmolding. Serve warm or at room temperature.
📒 Tips for Delicious Mini CANNELÉS with ONIONS and THYME 🧅:
☑️ Choose Sweet Onions 🧅
For maximum sweetness, use sweet onions like yellow onions or sweet Brittany onions. They caramelize better and add a richer flavor.
☑️ Don’t Overfill the Molds 🧁
Fill the mini cannelé molds about 2/3 full to allow the cannelés to rise and bake properly without overflowing.
☑️ Chill the Batter Well ❄️
Let the batter rest in the refrigerator for at least 3 hours before baking. This helps achieve a lighter, crispier texture.
☑️ Use Parchment Paper 🧻
To prevent sticking, use silicone molds.
☑️ Watch the Baking ⏲️
The cannelés should be golden on the outside but still slightly soft inside. Adjust baking time if necessary to achieve the desired texture.
