1 cup all-purpose flour (maida)
1/2 cup semolina (sooji)
1/2 cup sugar
1/2 cup milk
1/4 cup mashed ripe bananas (optional, for added flavor and texture)
1/4 teaspoon cardamom powder
A pinch of saffron strands (optional, for color and flavor)
Ghee or oil for frying
Chopped nuts (like almonds, pistachios) for garnish
Instructions:
Prepare the Batter:
In a mixing bowl, combine all-purpose flour, semolina, and sugar.
Gradually add milk and whisk to form a smooth batter without lumps.
Add mashed bananas (if using), cardamom powder, and saffron strands. Mix well. The batter should be thick but of pouring consistency. Let it rest for 15-20 minutes.
Frying Maalpuas:
Heat ghee or oil in a shallow frying pan over medium heat.
Pour a ladleful of batter into the hot ghee/oil. The maalpua will spread by itself into a round shape.
Fry until the edges start to crisp up and turn golden brown. Flip and fry the other side until golden brown as well.
Remove the maalpua from the pan and drain excess ghee/oil by placing it on paper towels.
Serve:
Garnish with chopped nuts (almonds, pistachios) while still warm.
Serve maalpua hot or warm. It can be enjoyed plain or with a drizzle of sugar syrup, rabri (sweetened thickened milk), or even with vanilla ice cream for a modern twist.
