Because most 1/10th scale cars really can't handle these big 1/8th scale dirt tracks, and they definitely can't share tracks at the same event because of how rough the 1/8th scale cars are on the surface. Only stadium trucks can handle the roughness and only 1/10th 4WD mod buggies can really clear the same jumps. There's also the fact that the pros flat-out demand as much traction as possible. "Sugargate" at the 2014 Cactus Classic was due to the drivers demanding it. That being said, there are proper dirt tracks out there specifically tailored to 1/10th scale, a lot of which were originally built for short course trucks. They're built with smaller jumps that are more 1/10th scale friendly. Thing is, it's the high-traction stuff that attracts racers, so even these tracks are starting to go the way of the dodo in favor of clay, carpet and astro.

Because regrooming takes a lot of time and these big 1/8th scale buggies can handle the rough surfaces unlike modern 1/10th scale vehicles. Trust me, if they were running 1/10th scale I guarantee the drivers would have made a huge stink about it.
