for the guards, you can give item to him, press ctrl+F to hit him once, give him item again, and repeat. Giving item to him causes him to perform refuse animation. While he is doing that, you can hit him, and if he tries to attack you back, you just give him item again. This may sound a little cheesy, so don't do that if you don't want to. However, this gives you free halberd and a lot of resources.
A great way to restore sanity early game (aside from prototyping) would be to eat Lotus Flowers. They give 5 Sanity points when eaten raw and decent health when cooked. But be careful, if you pick too many at once you will spawn a Platypine. While they are neutral towards you, they love nothing more than to gobble up every Lotus flower they see. I learned this the hard way. If you want to take on the Platypine be sure to wear armor as they can hit pretty hard and have slightly ranged attacks by throwing their spikes at you.

Platypine are stunlockable , so easy to kill , also cooked lotus flower gives 15 sanity , which is great ! So make a boat , and get flowers , reeds, and meat as well (platypine quill are pretty useless)
gonna have to correct you on some of these buddy, gnats make iron, rocks, and flint renewable if you dont kill them and just mine their homes they make a new one, for humid season a cowl will work just like a pith hat only you can see in the dark as well as see your entire screen useful for bat attacks/darkness
Iron is renewable in iron biome , thunder birds respawn if killed (but i don't know if they make iron back) and you can mine the gnat house , they will make it back so renewable rocks flint and iron !
