GOod morning! I love your work, thank you. I recently made a cake for a friend where the top tier slid off when she took it home. I could only re-frost the top tier as the bottom was so damaged trying to push the cake back together. I admit that the cake was not in the fridge, I've watched a video from you which explains I should have chilled before letting her take it home...the only thing is, it was 3 tier cake with a rainbow on top, so it didn't fit in my fridge. I am in Australia where it is currently quite warm. What do you suggest to avoid such a situation again? How was I best to try to fix it without damaging it even more? Hope you can help me to understand. I really love your tutorials and website.
Oh no! Tier cakes can be so tricky. Did you use dowels in the bottom tiered to support the higher tiers? And a cake board underneath each tier? If you can't fit an assembled tier cake in your fridge you can refrigerate the tiers separately and then stack them just before transporting while they're still cold and firm. Hope that helps!
