I find it super annoying when they talk over the music and talking and pausing after every single note they play. "then a b flat, and a G sharp and an F"

You're right ! Playing 7s8 highlights the 13th, 8s9 highlights the eleventh. This one seems more appropriate in this context. The choice is yours ;)

The 2nd lick is built with the Bb Mixolydian mode starting on the 11th (Eb). It can also be seen as the Eb major scale (Ionian), so you're not wrong. These two modes share the same notes. Bb7 is the V7 of Eb.

Puoi farci di tutto. Io li traspongo nelle tonalità più usate e su altre corde, poi le utilizzo (anche a pezzi, invertite, con altro ritmo ecc)... ci puoi costruire un signor abito! Dipende tutto da noi e dai nostri gusti. Ciao!
