I absolutely loved the spaetzli and the bread dumplings. I tried them on my visit to Bavaria. I was outside Munich for the bread dumpling, totally amazing. When I traveled further south, I had the spaetzli. In the mountains at a restaurant at the foot of a mountain listening to the cows come home! I thank that they made their own cheese for the dish. Wonderful memories.

I am very glad that you made such a wonderful food memories. And you are right, especially in the South you can find many alpine dairy’s that make their own cheeses:) I think I even created a video about German cheese from the alps few years ago:) maybe when is safe to travel again you come back to listen to the cow bells and eat the delicious bread dumplings and Spätzle again!

Thank you marta for these wonderful recipes. I'm half German, but I don't know much about the foods. Mom was belgium and she didn't cook much more than farmer meals. Nothing much from either side. I really do enjoy your show

My Brother lives in Kitchener Ontario ,it's got a strong German influence.Was settled by German immigrants 100 yrs or more ago.Usually has a week long October fest dwn town.Today here is Thanksgiving Traditionally Turkey and stuffing ,mashed potatoes and Pumpkin pie.It was a celebration of Harvest, Pilgrims and Native American s.Great content and interesting.

I am a very fortunate man. My great grand parents came from Germany and did I have some wonderful food when I was young. Grandma made the best chicken and dumplings ever. I ate the dumplings and left the chicken for everyone else.

I grew up on luscious Maultaschen dumplings and German potato salad. It was years before I saw American potato salad with mayonnaise. I was raised on oil and vinegar with celery seeds. I love making spätzle noodles. I prefer to make them and I know what's in them. I have a great spätzle machine from Germany. It turns out exactly like my grandmothers made it. We were a tight knit German family and we typically had traditional German food as well as other kinds of food. SInce both grandparents came from Germany to the U.S. before the war, our parents made a lot of German food. Being third generation, I am now trying to introduce that to my kids. German dessert are especially yummy too!

Just like to mention that there are at least two kinds of potato dumplings, half cooked and half raw and completely cooked . Also in my family, Maultaschen are like Strudel except with a flour and egg dough, rolled out and covered with sour cream and filled with apples. They are then rolled up and placed in a baking dish, 3 to 4 rolls about 10 inches long. Bake at 350F and cover the top with an egg wash. Can be eaten hot or cold with whipping cream or ice cream or plain.

Hello. All the dishes are widely cooked also in Poland and Czech or Slovakia. Those are foods of central Europe not only of Germanic culture. Well all alart from Tashen.

Every single one of these look absolutely amazing 😍😍😍 even the dough looks delicious 😋 I’m going to need to try to make these! Is there a specific type of potato you would recommend to use? My favourite side dish is usually a rice or potato dish. Really depends on what I’m making.

Thank you - not all of them looked as I wished, but I guess is not the most important thing ☺️ for the potato dumplings we use mealy potatoes which have the most amount of starch and therefore the dumplings are extremely soft.

My favorite dumplings are: "grüne Klösse" or "Thüringer Klösse".. 1/2 rohe geraspelte Kartoffeln, 1/2 mashed potatoes, filled with Butter toasted (white) bread cubes. Es gibt verschiedene Arten der Zubereitung.

Im Saarland heissen die Halb-und-halb-Klöße "Hoorische" (Haarige) wenn sie ungefüllt sind, als längliche Klöße (wie überdimensionierte Schupfnudeln) auch "Stracke". Gefüllte Klöße heissen "Gefillde" und sind entweder mit Leberwurst oder gebratenem Hackfleisch gefüllt. Zu den Gefillde gibts eine Speckrahmsoße aus ausgelassenem Speck (Grieben), die dann mit Sahne aufgekocht werden.

I am surprised that the traditional Markklößschen (German Name) or Markknödel (Austrian Name) did not make the list. Just wondering, I mean it probably is personal preference as bone marrow is not everyone's cup of tea but just thinking about it those are some rather unique and popular dumplings.

You mixed something up at number 9: Hefeklöse... at least here in Austria you differ between Germknödel (only steam-cooked) or Dampfnudeln (like your version). Also to mention: we eat Germknödel also with melted butter, poppy seads and a bit of powderd sugar...

I know Germknödel, but as far as I know they not German. At the Frankfurt Christmas Market we had a vendor selling those with butter or vanilla sauce and poppy seeds.... heaven on earth. I love those so much!
