If you watch closely you'll see the he uses the same cloth to wipe off spillover oil and to wipe counter and every spice container /tool. Yes very hygienic. He was probably told to wipe as many times as possible, even when he did nothing on the counter.

He fries them in two phases.... at 10:21 he stores the result of the first phase in the red tub; he seems to keep two fryer-full on stand-by. At 10:49 he shows the final product. With that system I don't expect him to throw away much product throughout the day. He coats the raw fries with starch to make them crispier.

What incredible work ethics! I feel that we complain more about our commutes to work or wishing to work remote; yet this kid probably has to push this cart to work, wake up early to prep the potatoes and condiments, and clean his pots and tools after work. I’m in my late 50’s and I started working in this country at 11 yo as a weekend porter(janitor), greased and fixed bowling ally machines in my early teens and became a mason and put myself through school(paid my own loans).
