From my research, I am not an expert at all, but the soil the corn grows in will have an affect on the taste of corn moonshine. Aging will mellow out the flavor. I am sure the sprouting membranes also have affected the initial, unaged taste. Look forward to your next batch.

will you try to make rakı with this new still? ferment red grapes until dry then add 15 ml anise oil per liter of non downproofed spirit and 5 ml of glycerin per liter of downproofed spirit. You can distill your own anise oil if you really want to but i recommend letting it sit in wine for few days instead of trying to distill oil from scratch if you can't find anise oil. very good traditional turkish spirit and doesn't need much aging, it's best when you let it sit 1 month before bottling.

It's a great way to get a 2nd run out of the same batch of grain. Also helps keep your paws off the All-Grain batch while it ages. And have you messed with Yellow Label Angel Yeast yet? Think cheat code for mashing in. Sold on Chasing the Craft store! I bet the Liquor Fairy would love some NGS made from rice.

Popcorn said if we don't take off those roots they'll add a bitter flavor, so we rubbed the dried kernels over the screens, knocking off all the dried roots prior to grinding, and with fresh malted corn no yeast is necessary, for the amylase and wild yeasts will properly convert sugars.

A lot craft distilleries do one and done runs with reflux and 4 plates. I assume they get similar flavor to a standard pot still stripping run + 1-2 spirit runs while saving on energy/labor costs.
@BeardedBored
@BeardedBored 6 месяцев назад
This was really just to see if it could be done, and how much flavor I'd get out of it. I have a lot of viewers who have only column stills and make whiskey, so I figured I'd give it a try. Since this one is modular, it's easy to run it in a pot still configuration. I got a surprising amount of flavor out of it with 2 plates for the spirit run. If I had run reflux that time too, it probably would have reduced it to a "light" whiskey flavor.

Good evening Bearded and bored. So, after having malted sorghum and made beer from it in Tanzania, I'm now in the land of the Galic distillation fairies, namely France. Can you answer a question please? Once the fairies have done their best on whatever fruit/grain I feed them do I, after the 2nd distillation, save the resulting alcohol at the 'high ABV? Or, do I get the fairies to 'cut' the alcohol to my desired strength, 42% ABV etc and then store/age it? Any info gratefully recieved 😊
@BeardedBored
@BeardedBored 5 месяцев назад
For brandies, the most common advice I've gotten is to store the spirit at high proof in glass for 3 to 6 months, then proof down to drinking strength, then store for another month or two if possible. If you're doing clear grain spirit, then just proof down to drinking strength and give it a day or so before enjoying. If you plan to wood age, keep it between 55-65% to age, then proof down. Same for grain and fruit spirits.

Hello from Ukraine! I recently started watching your channel. My liqueur fairy mostly brings me neutral spirits with a strength of 96%+ for infusions, gins, etc. I've just bought equipment for making homemade whiskey. On your new still, is the dephlegmator of the jacketed type or does it resemble a revolver? The revolver type significantly stops the esters.
@hooloodistill5044
@hooloodistill5044 6 месяцев назад
The dephlegmator and condenser of this set of distillers are welded by putting several thinner stainless steel tubes into a thicker stainless steel tube. The shape will indeed resemble a revolver.

I'm missing something; BB went through the percentages of dead through over modded corn but didn't mention tossing anything. Do you use only the goldilocks stuff or is it all flavor?
@BeardedBored
@BeardedBored 6 месяцев назад
Use it all dead kernels included. Even if 20% is not malted, 80% is. So the flavor will not be effected.

I appreciate your experiments. I can't find the answer to this: what if sweetcorn with the sh2 ( super-sweet) gene is used? This gene means this corn cannot convert sugar to starch in the first place. Surely this means that the malting process is unnecessary and adding refined sugar should be unnecessary.

So, let's say hypothetically, I went to tractor supply and got 50 lbs of whole cornell feed corn. Could I do this?

For a kick add some sweet feed with the crack corn
@BeardedBored

Yes, but it definitely needs to be whole kernel without any additives. I had to go to a feed store to get some. And Walmart deer corn would not even sprout for me.

@@BeardedBored sweet feed with cracked corn heated up for a hour put in some molasses at 125 degrees. You’ll like it . Don’t buy the sprout shit. What I’m telling you is old school 🤣

@@BeardedBored the only thing I don't like is that this unit doesn't hold temperatures as they say they do , if I set it at 190 it shut offs at 190 and my prosses stops and it takes a while to start back up, not happy with it, my turbo 500 stays what I program it at , and it's 600$ cheaper

The risk of going moldy or getting funky odors (that make funky flavors) while drying is much higher than a possible grassy note using green malt. Corn can be really hard to keep out of getting funky due to its longer germination period. First timers should go with brewers malt to get starch conversion.
@ARCSTREAMS
@ARCSTREAMS 6 месяцев назад
huh after all that work you killed the enzymes with boiling water and ended up using industrial enzymes, what was the point of the malting if you could not do a mash rest with the corn on it's own for conversion??
@BeardedBored
@BeardedBored 5 месяцев назад
The real point of the video for me was to see if malting adds a distinct flavor, something worth going through the trouble of malting for it. I plan on doing an unmalted batch with enzymes as a comparison, so I wanted to use the same exact process for both batches to reduce the variables that might skew the results. Also, I've used enough malted corn to know that the conversion is rarely as good alone as it is with added enzymes. Corn has a super low diastatic power (about 30L), so it can _usually_ convert its own starch, but that can vary with home malted corn. Easier to get the data I need by taking that variable out.
@ARCSTREAMS

i understand i wish you explained all this though, i know malted corn has low dp but was wondering how much malted corn is necessary to convert a certain amount of unmalted corn, i have no idea about how to do the math as its been a while but like you said even 100% is still not as good as using added enzymes still would like to see what it would taste like without the added enzymes if there is much flavor distinction or not , i think belmont farms uses a portion of both malted and unmalted but anyways i hate doing any of that kind of math and from now on been thinking of purchasing alpha and beta amylase enzymes for all my grain conversions if i can find a cheap large quantity of it online as im sure my local brew shop would be more expensive and there are too many options out there online was wondering if you can recommend a brand from maybe amazon or somewhere but im in canada and have no idea about the stupid shipping laws on such item they are anal here and wont allow us to import many things specially alcohol but i think enzymes might be ok id like to use them for easy brewing of beer or mashes from now on as i do not want to add sugar anymore , btw have you heard of angel yeast? its like magic enzyme that works in cold temps even and also has the yeast included so it does both jobs in one pitch , thank you for your reply bud @@BeardedBored
