Unlike last year, this year our unattended orchard produced fruit that we could finally taste. We’ve got early pears, cherries, sour cherries, and a few varieties of plums. There should also be figs, apples, quinces, walnuts, and a few others later on. In the meantime, we continue our fight with the 30-year-old ivy that has spread all over. So far, we have found six different pots underneath.

Traditional Bulgarian recipe

1. Yellow cheese stuffed frankfurters
In Bulgaria, frankfurters are called krenvirshi. These deeply nostalgic parboiled sausages are well known to every GenX and Millennial kid. Many have grown up eating them in various forms-whether as a snack, boiled, baked, grilled, in a bun as a hot dog, or as part of meals like beans, lentils and even Balkan pizza. Here we feature a lazy oven-baked variant.
Ingredients:
* krenvirshi (frankfurters)
* kashkaval (yellow cheese)
Slice the frankfurters, stuff them with yellow cheese, and bake at 200°C / 390°F for 5-7 minutes. Traditionally, this is done in mini grills that almost every household used to have, but nowadays a regular oven works just fine. You can either use the grill setting or top and bottom heating. The goal is to have the yellow cheese melted all over. Serve with a salad or, as we did, with fried spring potatoes.
2. Buhti
Another childhood recipe. Every household has its own way of making them. This is Eli’s grandmother’s version.
Ingredients (for 3-4 servings):
* 200g yoghurt
* ½ tsp baking soda
* ½ tsp salt
* 300g white flour
* 1 egg
Place the yoghurt in a bowl, add the baking soda, and stir lightly. Add the egg and mix well. Add the flour and mix again. Shape the dough into a ball and set it aside for half an hour. Flour a surface and roll out the dough to a thickness of approximately 1 cm / ½ inch with a rolling pin. Cut into strips with a kitchen knife and then cut across to approximately finger length. Fry in vegetable oil over medium heat for a couple of minutes, flip over, and fry until golden. Serve with jam, honey, or cheese. In our childhood, these were traditionally dusted with powdered sugar.
