I never get tired of watching snow roll off the blade. We don't get enough snow to need a wing, but if I do have some deeper stuff to push back, I'll swing the saddle into the high bank position but I'm in the woods and have to worry about stumps so it's not very often I can use speed to throw it.
Yes, I have the same problems. I can't get the speed to throw it due to the terrain and I have areas of woods and fire hydrants, power boxes and other obstacles. The roads cut into the side of the mountains also makes the drop offs a problem making it so getting too close to the edge is a concern for me. However even at slower speeds just the physical distance of the wing to move it farther off even just between obstacles is advantageous given the amount of snow we get and the wind that moves it back into the road. I can also bench the bank over stumps and obstacles like the rocks I have and avoid them but still move the bank off and shorten it below the height of the plow to then be able to roll future snow over that bank to get it off the road instead of falling back in. You can do that with a shifted moldboard also to a certain extent. It sounds like shifting the saddle may be enough for you and if your space is so confined that is as far as you can push it anyway, that is all you can do. Good luck.
