I've had a fabulous few days learning to make panettone (Italian Christmas cake) with a master pastry chef, Ruggero. He is one of the few people to still use traditional methods and ingredients, whilst being inventive with the fillings and toppings. Next year I'm going to attempt to make my own (on a much smaller scale) using everything he taught me. Let me know which flavour you'd like to try!
