In this video we psi cook our Copper River Red Salmon and Halibut left over from last year we also smoke and make Salmon Candy and Salmon Jerky.

I simply love that homemade steamer/canner pit you made. Lots of food can be done up in one setting. Time management is very important for you I bet. See you on the next video.

Yes it does the job, it is an old warming oven with a hot plate on the bottom for the wood chips

Try putting Gee from Costco in your canned halibut…it’s really good. I put 2tbl spoons in a jar

Ya it takes a long time to get it all up to temp before you see steam. I have sped the process up with a big torch but it usually burns some of the jars so this time I just took my time

This is the first time I’ve pulled the canner out in 2 yrs because of the house build. But that is the plan to help others it just never seemed to work out when I did offer to others

It turned out good we made halibut tacos and dip with. The boys prefer fresh cooked halibut for tacos but it was good enough and takes up less space in the freezer

Yes I made it and usually I use it in the winter indoors I just make sure to open the door for fresh air once in a while

That is a whole lot of work. I really do dig your big canner. That does save a LOT of time canning. But there is a ton of prep. Good job.

It is an old warming oven that we put a hot tray in the bottom that I put the wood chips on it works awesome

I didn’t know there was a meet up, I just got done running firefighters for the last 2 weeks up at my cabin. 2 fires very close to the cabin I was actually putting fires out at my buddies cabin 1.5 miles from mine before the fire fighters showed up

Great stuff.... myself I canned 65 dozen of sockeye salmon in 3 days ... BUT I never scale, never skin nor debone my salmon. Perhaps this is why it has so much flavor

I’ve never tried leaving the skin on but we do leave the bones. I use the tail/ back half of the fish for salmon candy and jerky so I don’t have bones in it

That’s a great canner! What BTU is the burner you’re running? Also, for someone who is new to canning fish, what do you use that canned salmon and halibut for? I haven’t got access to that fine salmon, but arctic char and sometimes maybe some cod. Hope to do some canning with that. Best regards from Sweden and a new follower!

I’m not sure the btu but it is your average turkey frier burner. I eat a lot of the canned salmon on cheese and crackers we also make salmon Pattie’s and smoked salmon wonton’s are prob my favorite. This is our first time canning halibut so not really sure what we will do with that but most likely halibut tacos
