There Mitsuri almost lost, at that time, she has a flashback of Rengoku saying to use her natural talent and flexibility as power and not weakness, and then she defeats the demon she was fighting and created Love Breathing. Even in manga it's stated she was not able to learn Flame Breathing and created a derivative of it. Not saying she is weak in any way. In manga it's said that her strikes are faster than tengen. So yeah It's safe to say that she only "knows" one breathing techniques even though she has learnt 2. No hate please

It've always been normal (atleast from my generation and up until now) to idolize fictional characters in some way. Parents (alteast to younger teens and kids) aren't heroes, they WILL be neglected.. stability isn't something a kid should worry about, so it will be overlooked in that manner. so it's much more important to the kid that they can idolize traits from sports idols, anime characters, fictional characters etc. to develope themself. Examples on "characters of old" that were mainstreamed idolized before Tanjiro (just to name a few) Gregory House, Superman, Naruto, Walter White, Jesse Pinkman, The Rock, Barney Stinson, Spider-man. I included characters from different medias to show that a lot of characters from different forms, universes etc. have been idolized for something they either represent as a cause or abilities / traits.

I think on why Giyuu doesn't Respond to Any of Tanjiro's letter is because it's his Crow. You see his crow named 寛三郎 Kanzaburou is an Old crow who lived long. And by this Giyuu's crow tends to always makes mistakes in delivering his letters , this had made Giyuu nervous.. So maybe Giyuu did respond to Tanjiro's letters but His crow Made a mistake Delivering it but I'm not sure if I'm Correct at this 🥲.
