Well this is not a cake... its an applesauce pie in a cake tin. LOL this one kinda threw me for a loop until I got halfway in and realized I just made applesauce. I could have just gone to the pantry and gotten a jar of applesauce! Ha!
This is definitely worth making - does it take place of apple pie? Definitely not. But it is a pretty good variation, especially when you have a TON of jars of applesauce that you don't know what to do with lol. Plus, if you find you end up with less than stellar apples that wont hold their shape for traditional apple pie, turning them into applesauce pie/cake is a great idea.
Next time however, i would use just a regular pie dish. I think the idea was that they would make bars... like a lemon bar or something like that, but either way it was delicious.

Apple Cake
Short crust pastry
450g prepared weight of apples (peeled, cored, cubed)
2 tbsp sugar
30g dairy free margarine
Sprinkling (to taste) of cinnamon, cloves or mixed spice
Cut your pastry in half and line the bottom of an 8x8 with one half, the other, wrap and ball up in the fridge. Mix everything else together in a pot until ready to mush. Mash together and then pour into pan. Top with crust and brush with milk. Bake 350 until crust is done.
