Introduction:
Recipe Name: 19B Mushroom Soup

Ingredients Main:
Phoenix oyster mushroom - 250 g (Black Pearl & Elm oysters can be used as well.)
Oil - 2 tbsp
Ginger - 1 tsp
Garlic -1 tsp
Chicken - 50 g (Cubes)
Prawns - 50 g (Cubes)
Chicken stock - 500 ml
Carrots - 2 tbsp (Fine diced)
Green onion - 2 tbsp (Chopped)
Soya sauce - 2 tsp
Oyster sauce - 3 tsp
Black pepper - ¼ tsp
Chicken powder - ¼ tsp
Corn flour - 3 tbsp
Water - ½ Cup
Egg - 1
Preparation:
1. Begin by gently brushing the mushrooms with a soft-bristled brush or a clean, damp cloth to remove any dirt or debris that may be clinging to them.
2. Since Superlicious Mushrooms are cultivated in a very clean environment washing is not required.
3. Pat the mushrooms dry with a clean towel or paper towel to remove any excess moisture.
4. Remove the stem by cutting it with a knife, place the top half of the mushroom on a cutting board, and cut it into ½-inch thick pieces.
5. Other than black pearl & king oyster, most of the oyster mushroom stems are hard to cook & they are recommended to be discarded.
Cooking:
1. Take chicken boneless and prawns and cut it into small cubes. Set aside.
2. In a pot add oil, ginger, garlic, and sauté for a minute.
3. Add in prawns and chicken and cook till color changes to white for 3-4 minutes.
4. Add the mushrooms and sauté for 2-3 minutes till it turns light golden.
5. Add in 500 ml of chicken stock and let it simmer for 5 minutes.
6. Add in carrots and green onions.
7. Add black pepper powder, chicken powder, soy sauce, oyster sauce and mix well.
8. Mix corn flour in water, gradually adding in the soup while stirring, and cook until you reach your desired consistency.
9. In a bowl beat the egg and add in the soup gradually. Simmer for 2 minutes till fully cooked.
10. Serve in a bowl with fish crackers. Serve with green chilli vinegar, chilli sauce, and soya sauce.
Safety Instructions:
1. Always use a sharp knife, when you use a dull knife to cut, you need to apply more force. As a result, the knife is more likely to slip and this increases the risk of injury.
2. To prevent contamination, it is important to clean your knife as soon as you’re done using it. Leaving your knife on your cutting board or in a sink full of soapy water clutters your kitchen and creates opportunities for contamination and injury.
3. Always use a cutting board when cutting ingredients. This will allow you to cut consistently and protect your work surface in the process.
4. Never leave your stove unattended while cooking. Stay in the kitchen while you're frying, grilling, boiling, or broiling food. If you have to leave the room-even for just a moment-turn off the stove.
5. Keep cooking equipment clean. Crumbs in a toaster, built-up grease on the stovetop, and excess dust behind your appliances are fire hazards.
Chef's Recommendation
1. You can also try it with other Oyster Mushrooms Such as, Black Pearl, Elm & Grey oysters etc.
2. Keeping the consistency of the soup is very important, Avoid making it too thick by overcooking it.
