Bagels get their texture from boiling and then baking them. Maybe that would help.

Next time add 1 tsp of xanthan gum it should give you that chewiness Aswell you forgot to bathe the bagels in boiling water water with baking soda that also gives the bagels their chewiness 😊

Great video. Will try it this afternoon. We live aboard a boat so I’m always experimenting with staples I have. Last night Cinco de Mayo I used a can of Rotel in the beef stroganoff and Greek yogurt instead of sour cream. Successful!
