I've been doing this for quite a while. 2 cups of whipping cream plus one can of condensed milk yields 2 quarts of ice cream. If you add real fruit for flavoring, be aware that the water in the fruit crystallizes because it freezes before the cream does. If you do not want crystals, try using extracts. For example, for orange cream sickle ice cream, use one tablespoon of vanilla and 2 teaspoons of orange extract. For chocolate chip mint, stir in a cup of chocolate chips or shaved chocolate and a teaspoon and a half of peppermint extract. Butter pecan ice cream actually does not have any butter in it. The taste actually comes from maple syrup or maple extract. Crumble and toast one cup (or more if you really like pecans) of pecans. Add 1 tablespoon of vanilla and two teaspoons of maple flavored extract. You need to toast the pecans so they stay crunchy. This is a great treat to make with the kids or grandkids, especially around holidays.
