22” Weber Smokey Mountain - Brisket - Foil Boat Wrap Method

In this video I fire up the 22.5" Weber Smokey Mountain and do a Brisket using the Foil Boat Wrap Method! This was the first time I tried this method and to be honest I still prefer to completely wrap in foil but the bark on this brisket was ridiculous! I used B and B oak briquettes and chunks of oak for the fuel and ran the Weber Smokey Mountain at 325F. I used a combo of Tailgaters BBQ Party Rub and Suckle Busters SPG for the rubs and the flavor profile those 2 rubs created was absolutely delicious! I highly suggest that you give the Foil Boat Wrap Method a go if you haven't already! Drop me a comment if you have ay questions or if you have a suggestion on what to cook next!

Being a former Iowa boy, it's always good to see a fellow Iowa pit master!! Brisket looks amazing!! Perfect smoke ring, juicy and tender, and an incredible bark!! Great video!!!! 👍👍

I know this has been up for a while, but I recently tried this on my new 22.5 WSM, yours and mama and papa joes videos were my guide, I even had gusty winds the weekend of the cook, combination of foil boat and extended rest period works great together, I made a point to mention you, you cook on all the same smokers I do, you have really reduced my learning curve 👍👍👍

Nice Brisket, Brian. Easy cook smokers and that's why I love them. Once you learn those vents you can some great food. Good job.

Another fun video to watch from the MH. I had to laugh when you coughed after rubbing that brisket. The exact same thing happens to me every time I use SPG from Sucklebusters. Smoke on brother !

I am not finished with the vid yet but I didn't hear about the water pan. Hot and Fast my guess is you didn't use it. I'm new to WSM I bought the 18 and I love it but I did one cook in the cold wind WITH water pan and I couldn't get over 205 easily. The water all condensed on the inner (icy) walls and ran to the bottom it made 'mud' under my coal grate. Science! In those conditions I'll never use a water pan again and the reading and vids I'm seeing not a ton of people use them at all.....

Water pan is in but it’s empty. I typically always leave the pan in but don’t use any liquid. IMO the WSM and barrel style cookers put out some moist meat so I use the pan as a heat deflector.

Do you think the boat portion can work in the oven? I could use the kettle all the way through but if i'm lazy I'd do that option. Also picked up the party and brisket rub from suckle busters ready for the super bowl.

Mad Horse BBQ - Hey Brian Question: With the Masterbuilt 1050 put together and if you wanted to take it somewhere would you be able to lay it on its back on a blanket in the bed of the Truck to haul or would you have to stand it up and strap it down > Didn't know if it would hurt anything laying on its back along with taking the grates out... ? Your thoughts would help - I am going to be buying one soon & need to know if I can take it places. Never seen one in person yet!

Hey Dave I don’t think that would be an issue at all. I’d prolly just take everything out of the cooking chamber and and hopper before doing that. Also I have the 850.

I did. Filled up the basket, lit a small chimney full of coal and poured it right on the middle.
