In this video I fire up the 22.5" Weber Smokey Mountain and do a Brisket using the Foil Boat Wrap Method! This was the first time I tried this method and to be honest I still prefer to completely wrap in foil but the bark on this brisket was ridiculous! I used B and B oak briquettes and chunks of oak for the fuel and ran the Weber Smokey Mountain at 325F. I used a combo of Tailgaters BBQ Party Rub and Suckle Busters SPG for the rubs and the flavor profile those 2 rubs created was absolutely delicious!
