I have never been interested in working at a restaurant, but I would relish the opportunity to spend two or maybe three years learning from this man to experience his expertise in meat and wood fire cooking.
IMO, This is a beautiful example of what composes the culinary arts. Yes, everything in the restaurant was idyllic, but that’s the point. Mise en place. Mise en place. Mise en place. Besides the beauty of the setting, hearing the years-emphasis on years- of work chef put in, in addition to a formal education is what I respect most. Before you get to cut the fish, you watch.
I’m coming next time in Singapore. This is my type of heaven. Well worth the money. Most butchers put this effort in. We just don’t see it. Love this. Put one in London. I’ll be there at least twice a week!
Wow I would love to travel to Singapore and eat at this restaurant. It's incredible! There's an emphasis on high quality fresh ingredients. This chef truly understands flavor and that it takes time to develop it and he puts that time in. He's also really on top of things. His entire brigade is a well-oiled machine. His manner of running The restaurant is very efficient.
Love the production of the video, the choice of music in the background matches the ambience of the restaurant and the style of cooking. Time for a trip down to SG to try out this place

The beauty of this extraordinary establishment is the effort put into every detail by so many dedicated people. The downside to the business model is that you must hit your numbers by feeding wealthy folks that can afford the prices they charge. Lose that demographic group for any reason, and you're immediately in trouble.
Simple economics - the kitchen has to bring in enough revenue to survive and with them only having 10 covers a night, you’d naturally assume guests are paying $$$ for their meal. Quality over quantity.
So I looked at it, this place is actually a restaurant in an extremely expensive (aka $1000+/night) hotel called Raffles Singapore. They are charging an extremely expensive amount for the rich clientele of the hotel. That is why they have such low covers. Tasting menu alone is like $220/person, before any alcohol.
Looked up the menu. The meat prices are BEYOND OUTRAGEOUS. Way more than you would even pay in NY. THey charge by the GRAM!! I would guess average 4 top.....1600-2000$ with alcohol!!!!!!!

Singapore 🇸🇬 is a wonderful place. Since this restaurant is in Raffles Hotel (5 Star) I know it is first class and quite expensive but well worth a one time splurge.
They are in a $1000/night hotel. A four top business dinner there is like $2000-3000. I’m sure they’re making a killing. The prices are higher than high end restaurants in NYC for example
I am not sure but the most common wood fired grill is the Josper Grill. If you check on Nisbets you will find some smaller versions of these grills. Hope this helps

Everybody stiff as shit in this setting. Me chilling at the house cooking whole lamb getting drunk and waiting for the rest of the party to come over. Oh i forgot i fed 20 for the price of a tasting menu.
"We use the whole animal" Okay, where are the organ meats, head, cheeks, cheeks of pork or lamb are excellent. They just like to use the latest buzzword. They're not really doing whole animal butchering. No head or organs? I mean c'mon.
Nonsense, look up the prices on google it’s hundreds of dollars per guest not including wine etc. Small number of covers at a much higher price, quality over quantity.
You don't no what you're talking about, Singapore is the biggest port in the world the amount of trade and wealthy people involved in trading in Singapore is obviously beyond your comprehension, this restaurant is high end and targeting those people.
Not at all as it is a very well life balance for the staff and the owner . They concentrate on a small amount of people , it is basically private dining . Also the goal for these passionate people is to make a good and decent living out of their job and not to open a chain of restaurants . They are not looking for growth .
