My favorite (and first) beginner amigurumi pattern is the baby octopus by "All from Jade", because it's a no-sew pattern, it's easy to follow and there is a free pdf version too, for people like me who need written instructions. You just need to know how to make single crochets and you are good to go. They make great keychains or fun christmas tree ornaments.
