Why do they cook better when cold? I’ve thought you allow meat to come to room temp before cooking.

Could you inject the apple juice instead of pouring it on or do you needs the liquid in the foil to kind of braise it in?

I’ve never injected ribs, but I’m sure you could try in small amounts! The apple juice in the foil tent is to just keep moisture so it doesn’t dry out!
