Hi, Mandy! I'm a long-time subscriber from Georgia. I usually comment on all your videos because you have such a calming demeanor and your recipes are easy and delicious. I was in a horrific car accident on June 15th and have been hospitalized since then for severe injuries and multiple surgeries. I've had intensive occupational and physical therapy and I have fought through terrible pain to be able to walk again. The guy who caused the accident was speeding, on the phone, and eating when he ran a red light and struck me at about 70 mph. Unfortunately he didn't survive the collision. I recently have started watching my favorite YT channels, yours being one of them, and they have truly helped lift me out of a deep, dark depression resulting from the accident. I'm thankful for your channel and your uplifting spirit. You are a true blessing💕💕💕

At first I was shocked at the Dorito casserole. I had some PTSD flashback to Jack's Cooking "enchiladas". This is completely the opposite looks amazing and some sweet tea looks great!

We do a version of the third one...only instead of pasta, we use leftover baked potatoes cut into bite-sized cubes...skins on. It's great for BBQ leftovers. It's hearty enough that you don't even have to include the chicken if you don't have it on hand...its also a great side. But, we've never met a potatoes we didn't like...lol. Howdy Gracie!

Yummy-looking as usual! A Paula Deen hack is that whenever you have a recipe call for crushed crackers and then melted butter to pour the melted butter into the baggie with the crushed crackers, crush it around as usual, and then place it on top. It gives a more even distribution of the butter on the crackers. Keep the awesome videos coming!

I'll be trying the second one tonight because I have it all in my pantry. Think I'll add scallions for color. Also, on the Mac and cheese casserole. If you don't want to buy both cream and half and half, use 1.5 cups of cream and .5 cups of milk (preferably whole). I'll be making all of these dinner gems. Thanks Mandy!!

Hi Mandy!! I made the filling for your southwest casserole & used it in tortillas. I put green enchilada sauce on top with more shredded cheese. I only had 9 tortillas. So, with the leftover mixture I crushed up some questions flavored potato chips & made the sw casserole. Both were delicious!! Thank you fir a new twist on chicken enchiladas.

I make something similar to the Mac and cheese except I add sliced mushrooms and diced red bell peppers. We call it “Grown up Mac and Cheese”. I’m definitely gonna try the Doritos recipe!!! Always need more chicken recipes.

Just saying what I have been doing for years... when I use the cracker topping, I melt the butter and add the crackers to that and stir it up. The crackers soak up all that buttery goodness. Love your show!

I know you don't show the meals they don't like, but wonder if you have any of those on video? Would be fun to have even one video, of their faces when they taste a meal that is NOT good. Lol. I made this recipe last night (chicken dorito casserole) for dinner but I didn’t have any Rotel so I added 2 oz of chipotle in adobo sauce (finely chopped) and 1/2 cup of medium salsa. It was delicious and had a great kick!! 4:52

I wanted something different for dinner tonight so the Dorito chicken casserole fit. But did not want to go to grocery is a 40 mile round trip, so I used ground beef and pinto beans. Absolutely fantastic.

Hi Mandy. My son and I made the Mexican chicken dish and it was terrific. We did change it up a little, by adding half the sour cream and adding white queso. Delicious! (Neither of us are fond of sour cream, so this worked great for us!) we also got creative with the left overs. We have a cooking show too, and will showcase this recipe soon. Of course we will give you credit! Love your show!
