There’s a lady on RU-vid who always makes Mexican dishes and they are SO good!! Her name is Rachel cooks with love and there is a recipe called pollo con rajas it’s a cream cheese sour cream sauce with roasted poblano peppers and chicken. It’s the best thing I have made in RU-vid. Serve it on tortillas and it’s 🤤. You have to make it for the channel.

Little tip: If you are not used to cooking with a Dutch oven, cooking on low to medium low. Dutch ovens are so good with holding heat and getting hot quickly. This will help with the sticking on the bottom of the Dutch oven.

I have to say, that Carbonara is easy to make, not many ingredients and they are simple ingredients, but man oh man, the flavor is Out of this world!!! Like you, I ALWAYS use some of my Pasta water in my sauces. That starch just helps bind it and makes it extra creamy.Also when boiling potatoes for mashed potatoes, I add a bit of the pasta water along with Butter, milk, salt and pepper, before whipping them. It really makes smooth mashed potatoes!! Some people put some frozen peas in Carbonara at the very end, like a handful and just stir them around the pasta a bit. For me, I can take them or leave them, so I usually leave them! Lol but that is the traditional way! and I too love a splash of lemon juice or a bit of lemon zest right at the end. Not too much, just a bit of acid to cut the richness of the bacon grease and egg. Honestly, I think it is the all time, super easy, very few ingredients, meal, that gives you the ultimate GORMET FLAVOR!!!! ♥️♥️♥️

Next time use Rotel for the fajita pasta. I use 2 cans of them for my fajita pasta. Then add shredded cheese at the very end, to taste. Your dishes look great!😊

I just bought a new pats maker and it is totally worth it. The machine was nit even that expensive . It is a little more time consuming but again totally worth it.

Next time you make the cheddar chicken pasta, I'd use ranch seasoning I instead of the ones listed .maybe add chopped broccoli, I did top it with grated cheese.Also chopped bacon too.

But then you find a recipe that looks doable and you give it a try!
