The pudding cake my mom made, was called an Icebox Cake. She use three to four layers of Graham crackers. One layer with vanilla pudding in between and the other with chocolate pudding, then repeat, and put sliced banana in between each layer, and on top, in a glass baking dish. Cover well and put in fridge, for at least 8hrs. Then top each piece with cool whip, when ready to serve. Delicious! Was a long time ago, we still love it. 😋😁👍
I do the eclair cake in many flavors..I use the cinnamon Graham’s for a diff flavor..I use choc pudding and vanilla frosting..pistachio,strawberry and pumpkin are also amazing...
Microwave the can of frosting about 15-30 seconds before putting it on the eclair cake. Makes it easier to spread and changes the consistency slightly for more of a ganache.
I've made the chocolate eclair cake for years. The easiest way to spread store bought frosting is to place container in microwave in small increments (maybe 15 seconds at a time), mix to test it is slightly runny, pour it on top then spread it out evenly.
God bless you both Ten fold. I live with my high functioning autistic nephew. I have taught him to cook and do yard work and he is doing amazing. He works doing lawn work for neighbors. And vollenteers at the food bank I am so proud of him he has come so far in the two years he's been here in Ak off Grid 😀🤸🎆🇺🇸🤴
Happy baking! My sisters have autism too - twins, eldest high functioning, the youngest more severe and mostly nonverbal - and we all love our sweets and baking together!! ❤️🙏😊 God bless you and your family!
I make the eclair cake at least once a year but I have also discovered that I can do a Boston cream poke cake and it is so delicious. I used to make Boston cream pies but then I figured out I could do it as a poke cake. I have nobody to feed anymore my mother put just passed away and she was my last living relative so I'm still going to do all of my baking and give out goodie boxes to someone.
Great recipes. When I fold in cool whip, I don't use the beaters. I just fold it in. That way it stays light and airy. Keeps a nice consistency. Thank you!
Christine Sexton: I thought about that too, you never use beaters to fold in whipped cream or topping as that high action breaks down the "fluff". That's probably why the mixture came out runny.
@Let It Be Brenda Gail Ya, avoid the cool whip, whip the real cream. I can usually use only 1/3 the sugar in a recipe, plus about an extra spoonful of sugar and no one even misses all that excess sugar.
My mother made the eclair 60 yrs ago, sometimes adding sliced bananas in between one of the layers. Soooooo good. And sometimes white icing. Just a change up. Mary
I used choc. frosting for cookies it's a bit richer and not as thick as that icing on the top and it has a shine to it when it comes out of the fridge. I never added cool whip to the pudding when I made it.
@@karvoshi1827 do you realize thiz is RU-vid & many people don't speak English as their first language?!!! You look like an asshole telling someone how to write when you dont even know their background. Grow up! Only children should act 10.
Yum, yum and yum. Funny story: when I first got married my mother in law always made no bake eclair cake so I thought it was her original recipe lol. Now I make it all the time. I always use chocolate frosting. If you add just a splash of milk and stir it in, it makes it way easier to spread. Love all these recipes.
I've made the Chocolate Eclair cake many times and I've found that using the Cinnamon Graham Crackers really enhances the flavor and as the lady said below sometimes to add a fruit layer (bananas, strawberries etc) So many ways to vary this dessert
It's bn yrs since I made eclair cake! I used to make it for every church function and got lots of compliments. I never told how simple it is to make! Now I'm anxious to make it again. And I'll be doing the other 2 as well! TFS! 😷
I make the eclair cake with chocolate Graham, put mint flavor in pudding, with green food coloring, use ice cream hot fudge topping,& decorate with Andes mints
Use the actual Oreo cream and get rid of half the sugar they have sugar inside the cream filling. That to the cream cheese with half of the sugar then do the rest as they say to do. Awesome
Sometimes, i do something similar with pudding and a bit less of the cool whip, (so its still a bit stiff, not so runny), and i use it as the middle layer for a layered cake. In stead of using frosting as center layer. Its lighter and so good!
I made the eclair dessert for Easter and my kids looooovvveeedd it. My oldest son is addicted to it. He asked me when will I make this again! Thank you for sharing your mom's frosting it tastes amazing. I will never buy store bought chocolate frosting again
I’m soooo gonna make all 3 of these during this social isolation!!! My husband just said last night “we haven’t had dessert in like a week 🙁”!!! So I believe thirst will do the job!!! Thanks Ladies 🤗 Stay Safe & Healthy and keep up the fun videos!!!!!
Tasty looking! I get that these are meant to be as easy as possible but real whip cream vs cool whip will always win. Huge noticeable difference and not much extra work.
For the eclair, you can also use chocolate pudding instead of frosting. It's super-refreshing in the summer when everything is ice-cold. I do that with my poke cake.
My oh my, you girls are just fantastic with such awesome recipes!!! Ya know, I host a crafters/quilting group twice a month at our town hall and you just give this old gal some great new recipes to make to take. We usually bring snacks and most of them bring dessert type things, I'm the salty one. But this time I will foot them and bring on the sweets! I love each one of these. You girls are so pretty, all of you. And all of you are such accomplished cooks. You have a good Momma.... Hugs to you all. Claudia
Lucille Ball what fun....I wish I could do something like a crafters group. I've tried coordinating a group with my local library and recreation center. They are not open to it.
Made the no bake eclair recipe with what I had on hand! 2 lemon 🍋 pudding packages-boil method, graham crackers, chocolate chips, coconut oil & powdered sugar. Followed or format with these things. Whipped the pudding with hand mixer. No cool whip nor heavy/whip cream. It came out awesome & everyone loved it!! Thank you for the awesome recipe. Can’t wait for our store to be stocked normally & be able to go shopping again!! Thank goodness for restaurant bulk buying group!!
Nilla wafers are a good option for a graham cracker substitute for the last two recipes. I have used ground-up rice Chex in place of the graham cracker crumbs in the last one for a Celiac friend. If you over bake some cookies that are a little bit too crisp for you but they're not burnt you can use those so they soften
For the Eclair cake, you can make a lemon version, simply change it for lemon jello, clear or creamy, both the same, still use cool whip, just change the frosting for vanilla mixed with a couple of tbsps of sugary lemonade mix.
You can also add. 1/2 -3/4 cup of finely ground graham crackers for a nice crunch in the peanut butter bars. And don’t be afraid to just roll into balls and dip just half in melted chocolate making “ buckeyes” All good ... thanks for sharing your sister inspired recipes!
Realizing the recipe already has graham crackers in it, should I add more to make buckeyes? I only ask because I did make the bars and they were very buttery. I’m wondering if you “Barbara Viera” and I’m only asking Barbara here, found them less buttery after adding MORE graham crackers?
Jamie Harrison yes, they might firm up more for rolling. Trial and error based on peanut butters etc. they didn’t refridge them which hardens up the butter ,making it easier to roll.
I made the eclair cake. Itcwascso pretty, I took a couple of pictures. I had some really ripe bananas, so I added slices to the cake and a chocolate ganache on top. Everyone loved it. My aunt ate hers and some of her mom's, too. The dessert was gone in 3 days. And it was a big dessert, too.
All three recipes look easy and so delicious, but I'd choose the peanut butter bars as my favorite. Who doesn't love the combination of peanut butter and chocolate? Yum-o!
Hey sisters! Thanks for sharing, grew up w/ all these recipes my whole childhood (I'm now 48), just realized I haven't made any of these in years!!! P.s. As much as I enjoy watching the "how-to", I'd also love to see more of the finished product AFTER the bars set & or for any of your recipes!
So impressed and very interesting thats what thinking outside the sqaure and clearly evolving its like baking cakes and switching it around and delivering something new like for a example instead chocolate cake go for a much healthier option say grapefruit or mango or pineapple or honeydew or apricot added crushed almonds nuts now that would be exotic and on a winner! ✈️
I'm a guy who lives on my own. These "no flour" recipes-I don't know why they appeal to me so much. The ease of prepping them just intrigues me so much. A no-hassle deal in the kitchen is always a win-win for me 😂😂😂
I just made these but with a little bit of a twist. I didn't have any graham cracker so I used Nilla wafers and my husband doesn't like chocolate so used Jam and made peanut butter and jelly bars! I only used one cup of powdered sugar and I think that's why my mixture with a tad bit runny so I ended up putting some quick oats in there to help thicken it up. Substitutions aside they were still super delicious!!!!
I've made the eclair dessert lots n lots of times. Use chocolate graham crackers and white chocolate instant pudding to take it up a notch. Sometimes I'll add a little green food and peppermint flavoring to the white chocolate pudding.
My aunt use to make this recipe. She would take a can of chocolate frosting put it on the microwave for a few seconds until it is runny and then pour it over the top. It sets back up when you put it in the refrigerator
I made the Eclair Cake..to die for including the calories!! Made it 2xs and gave away a goodly portion to absolve my guilt and minimize the extra COVID curves! Nix on the Cool Whip and used real whip cream instead. Made it even more decadent and rich... the first time I made a chocolate frosting and the 2nd time, a Boston Creme Pie choc glaze. Amazingly yummy. Must try your other dessert recipes but intend to share or give away otherwise I'd be scarfing it all down myself. Thank you!!!
What do you get your favorite uncle, who doesn’t need anymore “stuff”, for his 95th birthday? A take on his favorite dessert of course! That Chocolate Eclair Cake will do the trick very nicely, thank you very much! Thanks for sharing these delicious looking recipes and I love that they’re no-bake, which also makes them perfect for summer. I hope you’ve all had a wonderful weekend. 🤗 #kindnessmatters
That person who didn't listen when the professionals said add something sweet to your pandemic grocery list. Now they can't make any of the "no-bake" or "two-ingredients" recipes they've been watching on RU-vid for half-an-hour. But I'm just taking a guess.
I’ve made the chocolate eclair cake years ago and forgot about it. I have a husband who loves banana pudding. I’m going to try combining the two. I’m going to try with graham crackers and another one with wafer cookies. Then I thought on top of each pudding/whip layer putting a banana layer
