Friends and family, Ghanaian people are fun loving, and a warm group of human beings who also love to party and turn up! We have parties to celebrate the birth a child, when two people fall in love and proceed to tie the knot, we will have a series of parties starting with the traditional engagement celebration, followed by the white wedding creremony, etc! The party reasons in Ghana are numerous and food, good food is always the common denominator at such parties! These 3 show stopping Ghanaian party rice dishes are quite popular and frequently served, buffet style at most receptions and parties. Waakye is a highly nutritious rice and beans dish that’s served at parties with the deeply flavourful waakye stew, shitor (Ghanaian chili oil) noodles, gari fortor (cassava couscous-like dish), salad, fried spiced ripened plantains, avocado slices, and it is an incredible healthy quintessential comfort dish!
Jollof is similar to jambalaya, and never absent at any party in Ghana! You absolutely cannot have a party without Jollof! It’s a rice dish cooked in a richly flavored tomato base stew with any protein of choice, and in the more meat incorporated, the richer the taste!! That’s at least, been my experience 🥰
Fried rice is also present at gatherings and parties among Ghanaian people as it is easy to put together and there’s an endless range of options in terms of ingredients used to spice it up! Waakye ingredients
2 cups black eye beans
3 cups jasmine rice
1 liter water
1/2 teaspoon bicarbonate of soda
Salt (amount per your preference)
3 tablespoons cold pressed coconut oil
6 sorghum leaves AKA waakye leaves (available on Amazon.com
Jollof ingredients
For meat preparation:
1 pound deboned, skinless chicken thighs
1 pound beef cut into bite size pieces
1/4 teaspoon each of ginger powder, garlic powder, black pepper powder, 1/4 cup chopped scallions
1/2 teaspoon better than bouillon chicken base
Salt to season meat
For stew and jollof preparation:
1/4 cup tomato paste
4 Roma tomatoes
1 large red onion
3 scallions
50 grams ginger
4 cloves garlic
1/2 teaspoon aniseed
1/2 teaspoon each black and white pepper corns
1/2 teaspoon curry powder
1/2 teaspoon shrimp powder
1/2 teaspoon smoked paprika
4 cups rice
6 cups rice
1 cup carrots cut into discs
1 cup chopped green beans
1/2 cup each green, red, yellow bell peppers for garnish
1/2 cup red onions for garnish
1/2 cup cilantro for garnish
3 cups jasmine rice
3 tablespoons butter
1 cup home made chicken broth
1/2 teaspoon crushed black pepper
Salt to your taste
8 scallions finely chopped for cooking rice and for garnish
2 cups carrots diced
1 cup each green and red bell peppers diced
1/6 cup of low sodium soy sauce
1/6 cup olive oil
Salt and pepper to taste for frying rice

I really like how you specify on the measurements. That's what we lack as Ghanaians . Instead of saying 2 teaspoons of salt, we will say a little bit of salt which is relative. Kudos Nana..Can you ship me some to Massachusetts?

So now that I am feeling so much better lemme write my easy lol. So I saw this video the day it was uploaded but I was too busy running around and totally forgot to eat. I went to work without eating or bringing any food along which means I was starving. Hmmmm , so I was craving for some good old Jollof rice, then I saw that u have uploaded a video, I saw this video and I said my sister is so so wicked. This is wickedness to the highest level. I’m starving and all these mouth watering dishes staring at me but can’t even have one grain of rice. It’s ok.. lemme end my easy here but seriously sis I will hand u over to the YT police. 😂😂😂. For real though these look amazing and of course there is no party without these Ghanaian dishes. Well done paaaaaaaaaa. 👐👐👏

Nana Aba, you are an amazing person. I hardly comment on videos, but you made me to. I got into cooking recently and your channel has been really inspiring. The downside is I am making all these foods, but no one to eat them with. My first attempts at these meals always come out perfect. You are meticulous in every step of the process; you cook like a nuclear chemist. Thank you, and looking forward to more recipes. If I may ask, did you attend a culinary school?
