SHALLOT TART: Serves 4
40g Unsalted Butter
800g Shallots, cut into 2cm-thick rounds
3 tbsp Balsamic Vinegar
2tbsp soft brown sugar
1tsp dried thyme or rosemary
320g sheet puff pastry
100g goats cheese to serve
rocket side salad to serve
SAUSAGE CASSEROLE: Serves 2
4 spicy pork sausages
1 red onion, sliced
1 red pepper, deseeded and cut into large pieces
1 large carrot, diced into small pieces
2 garlic cloves, crushed
300ml chicken stock
2 tbsp sun-dried tomato paste
1tsp dried thyme
250g white beans
SUPER GREENS PASTA:
1 leek, chopped
1 large head of broccoli
2tbsp olive oil
2 cloves of garlic
100g spinach
2 large handfuls of frozen peas
450 g dried pasta, I used orecchiette
2tbsp soft cheese or mascarpone
1tsp dried thyme
1tsp dried oregano
25g Parmesan cheese or Grana Padano
salt and pepper to taste
