3. Change the 3 Minor To a 3 MAJOR Chord

James Blake originally helped Frank ocean wrote the song for blonde, so he was involved in its conception

What's it called when you use a flat 7 major chord or turn the 3 chord of a major scale major in music theory?

It depends on the underlying context for it, because there are certain scales or modes that would account for those notes that are outside of the typical major scale… if you thought of a song in the context of a “harmonic minor” scale instead of the major scale, then what I call the 3 Major would simply be the 5 chord that fits naturally within the harmonic minor scale… sorry if this is confusing. This is why I choose to base 99% of the way about music theory around the major scale. I prefer the minimalistic approach to music theory, and I honestly don’t pay much attention to what the standard terminology is.
