VEG PULAO
INGREDIENTS :
• Ghee - 2 tbsp
• Paneer - 100 gms
• Bayleaf - 1
• Cinnamon stick - 1
• Black cardamom - 1
• Green cardamok - 4
• Cloves - 4
• Cumin seeds (Jeera) - 1 tsp
• Green chilli - 2 to 3 slit lengthwise
• Onion - 1 sliced
• Carrots - 1/3rd cup or 40 gms
• Beans - 10 nos or 40 gms
• Cauliflower - 100 gms
• Green peas - 1/4th cup or 40 gms
• Capsicum - 1/3rd cup or 40 gms
• Washed rice - 1cup
• Water - 2 cups
• Lemon juice -1 tbsp
• Salt - to taste
METHOD :
• Wash rice thoroughly 2-3 times to remove excess starch & keep aside.
• Add ghee to a pan. Once the ghee is hot, fry small cubes of paneer to firm it a bit.
• Keep the paneer aside once both the sides are fried to a golden colour.
• In the same pan, add all the whole spices & cumin seeds and let it bloom.
• Next add in the green chillies & onions. Sauté the onion till translucent.
• Next add in all the vegetables and sauté for 5 minutes on a medium heat.
• Once the veggies are a little soft, add in the washed rice.
• Saute the rice for 2 minutes and then add in the water, lemon juice, fried paneer & salt.
• Once the water comes to a boil, close the pan with a lid and let the rice steam in for 10 minutes on a low heat.
• After 10 minutes, switch off the heat & open the lid. Give the pulao a light stir to avoid sticking to the pan. At this point the rice will be cooked 80-90% .
• Close the lid again for 10 minutes with the heat switched off and let the pulao cook to perfection in the steam.
• Serve hot with Raita!
