Hi, Your process is good and it will be more to maintain world class standards If you use stainless steel bucket. Don't use PVC bucket and store hot jaggery for the usage of acchu,vellam, Jaggery. Remaining and all good.
This is not the modern way of industrial production. Instead of transporting in metal containers they are using what looks like plastic containers, and they are walking with chappals on the mould track. Not hygenic. But I watched many cottage productions in India on the internet, all of them are much worse. Sir, don`t you have a supervisor for quality control so he can teach them what is allowed in production methods? Thank you very much. Coming from a person from German industry for 45+ years.
