Recipe:
1 venison back strap
Foraged mushrooms and greens
Butter
Cream
Salt/pepper
Get a pan hot as hell and sear that salted venison like you would a steak. Flipping until it’s done rare to medium rare. Set aside and cover to rest.
Pan to medium, add shrooms and a knob of butter. Cool until they are tender and a little crispy. Don’t forget to session! Add the greens and cook for a few moments. Add a little cream and rock and roll!
