I've watched so many episodes of this series and this is the first time a level 3 chef has actually just said "I'm a level 3 chef" Rather than something like"I've worked in the restaurant business for 267 years, owned my own restaurant empire in 16 countries, and made a 6 course meal for 2 different Popes and the Prime Minister of Kazakhstan"

My favorite part is where Saul announces "here is my burrito" with the same amount of proudness and love as a father announcing the birth of his newborn baby.

I actually learned something really important from Saul on rewatch because I used to think Gabrielle one felt more complex than his especially considering some of thr crazy stuff level 3 do in the show, Its that one of the important skills you can have in cooking is realising when you have enough. Saul remembered the first rule of good burito which I forgot which is you dont over stuff it. He spent his time wisely building complex sauches and let the rest of the ingredients be itself. I made it from scratch recently, really really good burito!! If you make enough of the suaces its also one you can have often thanks to you the simplicity of actually layering it!

The pineapple habanero salsa and the tres chiles salsa sound absolutely amazing. Going to have to try those for sure.

When Saul toasted those peppers on the pan I can guarantee he tear gassed the whole studio.
