We have been blessed with an abundant pepper harvest this year, so today I am going to show you 4 of the ways that I preserve peppers so that I can eat them all year long. I like to preserve my peppers in ways that will be both shelf stable, but also dehydrated, vacuum sealed and frozen so that I have a variety of options when it comes time to using them! Today we made and pressure canned a delicious stuffed bell pepper soup, we water bath canned a bunch of rotel, we smoked, dehydrated, and powdered paprikas, and we chopped, vacuum sealed, and froze as well!
