The simplest dish but requires alot of skill. What he does there is what we called " wok hei" . Using charcoal with high heat infuse the charred flavor into the dish. A really hard skill to master cus controlling high heat without burning is really hard to do. Done right and you will end up with crispy texture to the bite but tender and juicy inside. Yum

That was low heat and what he did is just sauteeing, wok hei is the flavor from a preseasoned pan put on high heat to cook the food in, pan flavor to food, not the charcoal to fo food.

You can look up the Serious Eats article about wok hei as well for a breakdown of what causes it, but yeah it's not from charcoal. Plenty of Cantonese kitchens use stoves that are gas powered but super high heat and they generate wok hei. It's not smokiness from the heat source and I'd argue flavor-wise is much more subtle. Regardless, this dish still looks delicious and I'm sure has plenty of smoky flavor

Kind of un-educated of you to say, this is Michelin "guide" basically, not a star or anything, they also sell tires. There are multiple categories, this is the one street food and other not very sophisticated but good tasting food gets.

That wok is WELL seasoned. No matter how hard I try my wok at home will grab on to rice noodles every single time. Maybe I need a coal burner at home for that extreme heat.

Maybe your stove isnt hot enough. I usually heat up my wok until wisps of smoke are on the surface then wipe it with a bit of oil on a paper towel to coat. Then i add fresh oil and sitr fry. maintaining high heat stops it from sticking to the wok's surface.

The secret isn’t seasoning or oil- it’s adding small amounts of water. The resulting steam that cooks off keeps the rice noodles from sticking -From actual experience.

Tbh, that pan is not seasoned nor a steel pan in the first place. It’s an aluminum pan which is cheap and conducts heat very well. However, Aluminum has low melting point so I wouldn’t recommend using it but the food stall does because it cost efficient. Ps. On steel wok seasoning, there’s a lot of video guide out there but I wouldn’t recommend doing it either since the steel wok easily get rusty if you didn’t use them every day. Also, you won’t just get the restaurant quality food from just a seasoned wok anyway, it requires a lot more as @Edward mentioned one of them

As far as I know, cooking using charcoal is more difficult than cooking using a regular stove. His technique is also very good. with simple spices

No wonder awarding 4th year Michelin in a roll. Use charcoal for cooking a really a old school style and it does make food tastes delicious.. in addition it's a golden stone that nowadays fewer and fewer people are using charcoal to cook now.

This is Ann guay tiew kua gai on the edge of Yaowarat (chinatown) in Bangkok. I used to eat there weekly and it is excellent. The noodles with raw egg are best, it is all fried in pork fat.

It’s Michelin bib, not Michelin star. A lot of street food vendors earn these. However I am not sure if the judges would check their kitchens. They usually go undercover as customers.

Cha kwetiau, or stir-fried kwetiau. Kwetiau is some form of noodle, made from rice flour instead of wheat. It isn't exactly noodle as of commonly known by the English speaking world. There is also another variation of rice noodle, which would resemble closer to the already widely known noodle but made from rice.

For me, this recipe is too oily. I prefer the recipe that removes the oil and cook the noodle only with the stir-fried chicken, the smell and crispiness would be better for me.
