My recent thrilling journey to Uzbekistan led me to the beautiful and captivating city of Tashkent, a city known for its incredibly hospitable and likable people, as well as its unique culinary culture that left me astonished. From cooking the famous Uzbek Plov in large Qozon in the grand Besh Qozon complex to baking Uzbek bread in the vast ovens of Besh Qozon, these experiences formed a significant part of my report.
In Tashkent, Uzbekistan, we visited the grand Besh Qozon complex, where both large and small cauldrons, known as Qozon, are famous for preparing Uzbek Plov. "Besh" means five, and "Qozon" refers to the special cauldrons used for cooking, hence the name Besh Qozon. A very important point here is the existence of the world's largest cauldron, the three-ton Qozon, where Uzbek Plov is prepared, which is truly exciting. They place a lot of firewood to create a fire under the massive Qozon. They put the meat inside the Qozon until it turns golden brown in the oil. Then, they add salt and spices, mixing them with the meat. Uzbek Plov comes in two varieties: yellow carrot and orange carrot, which are added to the meat. Chickpeas, raisins, and water are also added to the cauldron, and everything is mixed together. Chopped garlic is sprinkled over the previous ingredients, and the next step is pouring rice over everything and covering it completely. Several plates are placed on top of the rice, and after a while, they start collecting all the meat. They finely chop the meat and mix it gently with the various ingredients. The pilaf, a combination of rice, yellow and orange carrots, raisins, and chickpeas, is placed on a platter, and chopped meat, horse sausage, meatballs, and quail eggs are added. I must say, Uzbek Plov is an amazing, incredibly delicious, hearty, and exciting dish. In the smaller Qozon within the Besh Qozon complex, we also witnessed the fascinating and entertaining process of making Uzbek Plov. In another part of the Besh Qozon complex, they bake the famous Uzbek bread in large vertical ovens. The dough, prepared in advance, is stuck to the walls of the oven, and lots of dough goes into the oven, which is truly a spectacular sight. Each oven contains a large amount of dough, which ultimately turns into the famous Uzbek bread and is removed from the oven. A lot of freshly baked Uzbek bread is made, which is not only beautiful but also very delicious.

Taster in Central Asia is just short of a classic. I suggest you watch some Keith Floyd episodes like Floyd on France. He is my favorite all time foodie travel show. I like the way he interviewed people and added that little bit of culture to each show but was still centered on food. Give it a try you just need a little bit more sophistication.
