Personally, I would blanch the broccoli ( cook in boiling water very quickly for 1 to 5 minutes depending on the veg, and immediately cool it down with cold/iced water to stop further cooking)

Next time, just use a parchment paper or cling film and rolling pin to roll it out before cutting, that would work faster. Well done. You inspire me a lot
Hey Suzy, they are cheaper because they have less meat they also use no casings unlike kawaida sausages use animal intestines to case the sausage meat hence the different texture

Joan Wainoga, you dont need a cooker to bake. Just have big sufuria with tight cover. Pre-heat it. Use smaller sufuria to bake inside the big sufuria. Place 3 stones at the bottom of the big sufuria to suspend the sufuria you will insert inside so that it doesn't get direct heat from the fire. If you have a metal rack, use it instead of 3 stones. Though i have a cooker, I tried and it worked. You can place some hot charcoal on top to brown the cake at the top. Not necessary.
I can try to send you a lemon cake recipe that uses oil instead of butter and it's quite tasty, I have used it severally and it never disappoints, Like you I prefer recipes incorporating oil than butter as it's less costly, just let me know how to send it to you.
Which lemons did you use. The imported yellow ones are the best. Also you might have grated the rind to much that you reached the white part which makes the cake bitter
